The best way to describe Alison Collins is fun and spunky. Her English accent only tops off the amazing experience you will have with her. If you are interested in having a wedding cake that will feel you with happiness Bake My Day is the way to go. Alison has proven to us and her clients that she can truly do anything. From 5 tier cakes or Star Wars themed grooms cake Alison can make your ideas come to life. Her cakes make you double look to make sure its cake and not real.
Here is a little more about her.
How did you get into baking?
Many years ago when I lived in England my best friend and I were both stay at home Moms of small kiddos. We spent a lot of time at each others homes and when one of the kids birthdays came around, we decided that we could not afford a fancy cake but we both had culinary abilities, thanks to very persistent teachers at an English Girls Grammar School, so decided that we would do it ourselves! Ange was a great baker and so she made the cake and I did the decorating. I am sure it was terrible but we were excited with the results. From there we were asked to make other cakes and it became a little side gig! Ange would bake the cake and then bring it to me and I would do the decoration. Then I moved to the USA and I did not continue the cakes. Several years later when my son was a toddler, he asked for an Army Tank cake for his birthday..... I couldnt find anywhere in Lubbock to do that, at the time, so I decided, once again, to try myself. And the rest, as they say, is history!
What make you decide to open up a bakery?
I am a home bakery and so my business just progressed, by word of mouth, from a few cakes for friends here and there, to opening my official home bakery. I am not sure that it was a conscious decision, it just kind of evolved!
Do you prefer special occassion cakes or wedding cakes?
I absolutely LOVE my job. I love all kinds of cakes for different reasons. I have been honored to be a part of peoples very special days from gender reveals to weddings to graduations to birthdays........ this is a huge honor and I am humbled by and grateful for everyone that chooses me for their special days! However, through this whole pandemic I have come to realise that weddings are my absolutely passion. I love being a part of such an amazing industry and working with the most talented and artistic people I have ever met. Lubbock has a huge pool of talented artists and I have missed each and everyone of the amazing vendors that I usually get to see weekly. I cannot wait for the day that we can be back "doing our thing"!
What is the favorite wedding cake you've ever made?
I am not sure that I have a favorite. Every cake is special to me. Some cakes are in my personal style and others are in the style of special brides and very different to my style but I love each the same! Styles cannot really be compared and therefore I would say that I don't have a favorite!
The hardest wedding cake you have ever made.
I love a challenge and so cakes that are artistically difficult are so enjoyable to me that they are not hard! I get excited when a bride wants something different and challenging! However, I am not an engineer by any means so anything that is structurally difficult is hard for my creative mind. Thank goodness I have a husband that is talented in that area and always willing to listen to my crazy schemes and make them come to life for me!!
What should brides know about you?
One of my favorite parts of wedding cakes is getting to know brides and their families. I love the process of getting to know the bride and groom, meeting their families and helping them with the planning of of their cakes. I guess therefore that what brides should know about me is that I spend a lot of time getting to know them and building a bond with them so that I am able to understand their vision for their cakes and the whole day in general. I will make the process as easy as possible as I understand the stresses and time constraints of being a bride, a mother of the bride and a mother of the groom.
what should brides know about wedding cakes?
As far as my bakery goes - brides should know that all my cakes are custom so I am extremely flexible with flavors and design ideas. I am here to make their dreams come true in cake form. No question should go unasked and no design idea is out of the question. I will work with them to get the kind of cake they are looking for while considering their situation and budget. As far as wedding cake in general goes, I would say that brides should know that wedding cake should be a reflection of their style- both in flavor and looks. It doesn't matter what the "traditional" wedding cake should look or taste like. Show your style, do a funky flavor. DO YOU!
Are there any myths of wedding cakes in the wedding industry?
Well, I suppose my answer above kind of covers this too. One of the myths that I hear all the time.... the frozen anniversary tier tastes terrible a year later! NOT TRUE! I don' t freeze cake prior to the wedding. Everything is made fresh. Therefore, if you follow the instructions on my delivery box and freeze the top tier, it will be delicious on your first anniversary.
There is a myth in the whole industry that I talk to brides about all the time- I call it wedding shaming. Brides need to know that they don't need to do something just because their friend did or Mom wants them to or its all over pinterest. Weddings are personal and should reflect your personal style not what everyone else wants. This applies to cakes and all other areas of the industry. YOU DO YOU is my favorite saying. If you do what your heart tells you, everything will be beautiful and all about you!!!! Make this your day and your celebration! And always remember why you are at this point....LOVE and choose each other every day!!
